Chile (and especially Santiago) is know for seafood.  Definitely check it out at the central market in Santiago, especially the Machas a la Parmesiana (clams with melted parmesan cheese).

  • Pisco Sours
  • Carmenere red wine 

Highlights:

  • San Pedro - cute desert town with dirt roads, great restaurants, and amazing tour opps
